Summer Watermelon Salad

Hey Ya'll!

I did not even plan on making this into a social media post, but it was a hit! This is a recipe that is super easy and super light for these hot summer days. Here's what you need:

-Watermelon chunks (i just bought these already precut in the store)
-Cucumber cut in cubes
-Avocado
-Cherry Tomatoes (halved)
-Feta Cheese
-Honey (I used the raw honey/natural)
-Herbs (you can use mint or basil, I opted out this time)
-Garlic salt, pepper, garlic powder

Just mix all together and drizzle a little bit of honey over your salad and enjoy! This would also pair really well with some grilled shrimp or chicken, I had mine with some scallops!

Okay, ya’ll know I’ve been working on my fitness. I’ve been following a plan and partnered with an amazing health brand (that I will soon reveal) and of course working out with Curvy Cardio 4 days a week. So I decided to make a Cauliflower Taco Bowl because your girl got GOALS!

It's been a rough week, so we have to make sure we are still being good to our bodies and feeding our bodies good food! This was the first time I've ever made a Cauliflower Taco Bowl and it was super easy and quick!

Here’s what you need:

  • Packet of Cauliflower Florets - i bought this already cut at Trader Joe's
  • Taco Seasoning
  • Garlic Powder
  • Onion Powder
  • Olive Oil
  • Spinach
  • Tomato
  • Red Onion
  • Optional: Sour cream, Black Olive, Mexican Cheese, Avocado, Salsa
  • I found this Cilantro Dressing at Trader Joe’s that is absolutely delicious and decided to put it on there with some salsa


Here’s What You Do:

  • Coat Cauliflower florets in olive oil and sprinkle a tablespoon of Taco Seasoning, Garlic Powder and Onion Powder
  • I used my Air Fryer on 400 for 15 minutes to cook Cauliflower
  • You can roast in the oven at 475 for 25 minutes if you don’t have an Air Fryer
  • Make your Taco Bowl!
  • I used spinach, tomato, onion, a little cheese (sorry I can’t help it), avocado and a little dressing

This is so filling, easy and so yummy! Would you try this?

Quick Cheesy Shrimp Enchiladas

This is a recipe for all my people who “don’t have time” but still want something good and easy to eat. I literally made this with ingredients I already had in my fridge, I cheated and picked up some grilled shrimp today while running errands for my parents. I got the 12 count grilled shrimp meal from Longhorn. I ate the broccoli and salad it came with for lunch and used the shrimp for my dinner. Smart, right? I know.

Now, if you want to show out, you can of course cook your own grilled shrimp, make your own enchilada sauce and grate your own cheese. It’s Friday and it’s been a long week - so nah. I usually grate my own cheese but I like the Sargento cheese line - It melts good and it taste fresh (ya’ll know what I mean). I also like the El Paso Enchiladas Red Sauce, it’s the best I’ve tasted so far from the grocery store. I also like this brand of tortillas, La Banderita - they are light and better tasting to me.

I would typically add sour cream, green onions and tomatoes on top - but I don’t have all that. Honestly, these cheesy shrimp enchiladas don’t need it - Here’s what you need:

Ingredients:
  • Sargento Mexican Cheese Blend
  • 12 Grilled Shrimp (you can make/cook or I did a carry out from Longhorn)
  • La Banderita Large Flour Tortillas (4)
  • Enchilada Red Sauce


  • Preheat oven to 350 degrees
  • Pour a little Enchilada Red Sauce to coat the bottom of a oven safe dish
  • Take flour tortilla and fill with chopped up shrimp and cheese
  • Roll the tortilla and place in the dish
  • Repeat for all 4 tortillas
  • Pour the remaining red sauce over the rolled tortillas so they are evenly coated
  • Sprinkle the rest of the Mexican blend cheese on top
  • Bake for 20-25 minutes until cheese is bubbly and has a slight crisp

Cinco De May-Mo!

I remember celebrating my very first Cinco De Mayo with my father. He took me to a festival happening in Cincinnati Ohio. I was blown away with all the culture, food and family vibes. If you don’t know my father’s mother was part Mexican, no wonder I am so caliente! :)

Since we are quarantined and I can’t celebrate with my friends and family, I decided to have my very own little “Cinco De May-Mo!” Here is what I did:

Made a super easy taco dip
Ingredients
  • 8 oz package of cream cheese
  • 8 oz sour cream
  • Cheddar cheese
  • Taco seasoning
  • Lettuce
  • Tomato
  • Olive
  • Optional: onion, peppers
Steps:
-Mix cream cheese, sour cream and taco seasoning (about 3-4 tablespoons) in bowl. I got fancy and mixed it with my electronic hand mixer my mother gave to me
-Spread mix in a square or round pan - I used a 12 X 9 inch pan
-Top with cheese, lettuce, tomato, olives and any other toppings you wish
-Serve with Chips! (Make sure you refrigerate until ready to serve.)

Enjoyed a delicious tequila cocktail from Hidden Spirits Cocktails
(PS this is a black woman owned liquor brand and this drink was AMAZING).

Hidden Spirits Cocktails is a black woman owned liquor brand and I got to try a bottle of the Strawberry. It’s already mixed with tequila and ready to serve. I loved it! The cocktail was not overpowering, the tequila is subtle and smooth. Unlike most pre-made mixed drinks it tasted as if it was just made in front of me at the bar. 4 Ingredient Alfredo, Seriously.

Alright, this was the most low maintenance meal but was SO GOOD. I promise, if I can do this - so can you! So lately, I’ve been keeping it low carb/high protein but it was Friday so I decided to treat myself to some carbs, responsibly. Also, I decided to cook with whatever was in my fridge because my bank account told me to sit down somewhere. Here is what I made and the sauce is only 4 ingredients! (Minus seasoning, gotta have seasoning).

Here is what you need:
  • 1 cup heavy cream
  • 1 Cup parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons garlic
  1. Boil and set aside bow tie pasta (you can use whatever pasta you have if you want).
  2. Melt butter garlic over medium heat
  3. Add cream slowing, whisking
  4. When it boils turn down and let simmer for 3-5 minutes until thickens
  5. Add in seasonings - I like to add a small dash of nutmeg, garlic and herb seasoning and pepper
  6. Once thick, add in parmesan cheese and whisk until creamy (If you need to thicken the sauce up more I like to put a little pasta water in there).
  7. Toss in bow tie pasta
  8. Serve with Shrimp or without! See shrimp recipe below

Shrimp:
  1. Rinse 1 lb of peeled and deveined shrimp
  2. In a medium pan, add 3 tablespoons of olive oil and 2 tablespoons of mince garlic
  3. Add shrimp  medium heat pan
  4. I like to add a splash of white wine when I’m feeling fancy
  5. Season with your favorite seasons like an all bay or garlic pepper
  6. Let cook for 10 minute or I like to watch it until medium brown and coated with garlic

Loaded Caulifower Bake

Let me start by saying, I AM NOT A PROFESSIONAL COOK and you know I typically don’t have much time to cook. So anything made easy, I’m on it. Many of you may know me as the crockpot queen but I can also make a mean one pan meal. Right now during quarantine I am focusing a low carb, high protein meal plan (not a diet, lifestyle changes). I am cutting out most meat, although I treated myself to a little bacon, for this meal :) The Lord is still working on me.

My favorite recipe inspiration site is Pinterest! I found this bomb, “Loaded Cauliflower Casserole Bake.” So  I decided to make a Kroger run and pick up all the ingredients I needed. It’s really simple and most things you probably have in your refrigerator already.

Ingredients all found at my local Kroger:
  • 2 bags of steam ready Kroger cauliflower
  • Heavy Cream
  • Sour Cream
  • Cheddar Cheese (I decided to split the recipe and add Smoked Gouda) Because i'm fancy :)
  • Green Onions
  • Minced Garlic
  • 2-3 slices of Bacon (you can use turkey)
  • Seasonings - I like use Mrs. Dash garlic and herb seasoning

Let's Make Magic!

  1. Preheat oven to 450 degrees
  2. Microwave bacon
  3. Microwave 2 bags of cauliflower
  4. Shred 4oz cheddar cheese, 4oz smoked gouda
  5. Chop green onions
  6. In a mixing bowl mix 1/4 cup heavy cream and 2/3 cup sour cream
  7. Add in seasonings, half of cheese and green onion and 2 tablespoons of garlic
  8. Fold in the 2 bags of cauliflower
  9. Transfer mixture into an oven safe pan
  10. Add the remainder of cheese and green onions
  11. Bake for 5-10 minutes, I like to remove when the cheese browns
  12. Serve hot, sprinkle bacon pieces on top
  13. Enjoy!

Bloody Mary Morgan

Do you like Bloody Mary's? Give it a try!

It’s Fri-yay! Let’s face it, we had a long week not knowing what day is. I’ve missed happy hour with friends, so I decided to pick me up a few ingredients to my favorite cocktail, a Bloody Mary. Now, I know some folks may not like them, but have we really given the Bloody Mary a chance? It’s the perfect drink anytime of the day, I literally ask for a Bloody Mary at both morning and evening events. Plus, it has tomato juice in it, which has vitamin C - did you know that? Every now and then I #treatmyself

Here is the recipe to my favorite drink (and it’s super easy!)

* 1 part vodka of your choice, I made this with Titos Vodka
* 4 parts Bloody Mary mix, my favorite is Zing Zang Mix
*Ice cubes
*Squeeze of fresh lime
*Optional: I like adding celery seed, black pepper, green olives and a pickle :)

You can also jazz up your bloody mary with cheese, meats and really anything you want. I love going to a bar or restaurant who has a bloody mary bar where you can make your own. It's like a drink and meal all in one!

Remember, we may be quarantined but drink safely and only if you are 21 and older.
